Berry and Basil Oat Crumble


The health kick continues.

By health kick, I mean dramatic reduction of the consumption of curly wurlys, crisps & packets of revels. I'm unsure of whether these are purely British junk food delicacies but I assure you, they are tempting, fattening & addictive as anything.  Especially those bloody revels!  Argh!

Alas, I now live with a boy who can gorge on these things and stay trim.  So they are stuck in my pantry, calling the seductive song of sugary temptation every time I pass.

Whilst having a bit once in a while is no biggy, we all know that giving in to the beast regularly can result in...unsatisfying results.  So most days, I give myself a little shake up and challenge myself to eat well, treats and all.

So this weekend has seen me cooking lots of yummy things.  Low fat banana butterscotch snack cakes, my first roast chicken (I went for lemon herb), a "healthy" toffee apple crumble for my parents anniversary, A chili chickpea veggie bake, a blow out curry from scratch (with naans, and poppadoms galore!) and of course, the overuse of my granola jar & posh pans.

I'm sure most of you have seen the Breakfast crumble I posted a week or so back.  This is very similar, but instead of being for breakfast, I've been having it as a pudding.  Some of you might have read the basil/strawberry combination and not been in the least surprised, other might grimace at the sound.  Let me promise you - the combination is delicious, as long as you don't tip the whole jar in, yeuuurck.

Ooh my I almost forgot to mention the smell that this leaves in your kitchen as it's cooking.  The sticky bittersweet smell of sizzling raspberries.  Or the bite of the fruit against the cool creaminess of the yoghurt.  Yep, it's a winner.  Also comes in handy as a lip stain if your feeling..ahem...fruity.

Yes okay, my puns are awful.  Let's continue shall we?

Here's a few photos of the fruit being cooked.  Just to give you an idea of what to expect.  By the end, the raspberries will reduce to mush and everything will be pinky red.

So the leftover juice - I ran out of space to suggest things to do with it!  Naturally, the first suggestion would be to skip draining at all and let it all mush in with your pudding.  Or, you can drain it off, like the recipe says and keep in stored in the fridge.  It taste brilliant drizzled over your yoghurt in the morning, or mixed into flapjacks.

All in all, a handy leftover to have in your fridge!

  13. This looks really good! I've never tried the strawberry basil combo yet but this may be a good place to start! I am in a similar situation of living with someone who insists on having at least 3 varieties of biscuits in the house at any given moment and then waves them in my face while he's eating asking if I want a bite!
    A few times I have made blueberry oat muffins to eat as a healthy snack and I use agave nectar instead of sugar and you can add some spices for flavour. The recip is on my blog is you ever fancy tyring them
